Polymaster is the smallest glass and is designed to be your everyday glass. Ultima is taller and is supposed to provide a bit more precision. Gran Ultima (a bid wider) is designed for complex and full-bodied wines.

How did the three models performed? Well, they all performed very well in expressing the notes of exotic spices, rose and truffles of this elegant Barolo 😊 Mouth experience was also very satisfying. The Gran Ultima delivered the best on the Barolo, but the Ultima was very close and the Polymaster too.

I think the Polymaster should be a fit for the great majority of wine lovers. It is a great glass with a very attractive price (8,90 euros). My personal choice would be the Ultima (17 euros) over the Gran Ultima (20 euros). I prefer taller glasses 😉 The Ultima is a bit more versatile and less heavy than the Gran Ultima.

PROS: great tasting experience, very attractive price, rock-solid (they won’t break in your dishwasher). CONS: they feel a bit heavy compared to the competition.

The region of Valpolicella in Northern Italy 🇮🇹 is probably the most famous wine area using that specific technique, which was already used during Roman times. But we found appassimento-style wines almost everywhere now, even in Canada where I live (I tell you more about it later this month). 😉

The wine I want to present you today is an appassimento made in the region of Gattinara in Northern Piemonte. It is produced by @travaglinigattinara, one of the most important producers of the appellation. ☺️

The cuvée Il Sogno (literally "The Dream") is made of 🍇nebbiolo grapes which are dried for about 100 days. After month month of maceration, the wine is aged for 40 months in 20 hl Slavonian oak barrels and rests for an additional 8 months in bottle before being released on the market.

Elegant nose of 🍒cherry, truffle and walnut. Medium-bodied with high alcohol content, but well structured due to the nice acidity. Some balsamic flavors on the finish.👍

I’m not a huge fan of Amarone-style wines 😌 I often find them too much in terms of alcohol and flavors. But this is not the case with this one. Kudos Travaglini 👏👏👏 that Gattinara wine is top! Similar in style to Sforzato wines in Valtellina, Lombardy (a region I also ❤️). A proof that nebbiolo can produce great results with appassimento! 😊 Cheers,

I’ve discovered it at the Michelin-starred restaurant of @cordeillanbages and the beauty of it is that the sommelier blind served it to me 😜 So you can imagine the surprise when he revealed the wine.

But let’s speak about Richard Leroy. A polarizing subject, believe me 🤨 Some people love it and call him the genius of chenin blanc, others literally hate him claiming that his wines are unstable, unsteady, oxidized and never the same from one bottle to another 😮 I’m not here to judge as I have only tasted one glass, from one single bottle, but…. WOW! That’s the first word that came to my mind when I had a first sip! ❤️

This 2010 🌿organic🌱 chenin blanc, with no added sulphur, is aged in old barrels and, without any surprise, produced outside the appellation, as a vin de France (Loire) 🇫🇷 Enchanting nose of 🍑apricot, 🌼acacia and 🐝bee wax. Impressive concentration and crispiness and a long long mineral and subtle bitter finish 🤤 What a wine ! 👏👏👏

Being able to produce a natural wine with such tension is just remarkable and shows how much Richard Leroy is a master of chenin blanc. Period. As a great syrah fan 😌 I often explore the wines of the appellation as it can offer one the best value wines in the Northern Rhone area. That being said, it is very rare that I drink Crozes white, as you don’t find many of them and that’s why I forget them.

This 🌿organic🌱 wine named Cuvée La Rage is produced by Domaine Les 4 Vents in Mercurol. It is a 100% 🍇marsanne from 40 year-old vines. Hand-harvested and fermented with indigenous yeasts. Fermented and aged in vats and demi-muids for a period of 10 months.

Look at that golden color! Nose of 🍯honey, white flowers with also subtle menthol notes. On the palate, it is complex and very round. Actually, it’s been a long time I didn’t taste such roundness in a wine. Almost an oily texture 😯

Definitely not an aperitif wine, but not too heavy either. You’ll need some poultry or white fish in sauce 🙃 Not really my style, but very well made 👍Full-bodied, rich and round, white wine lovers will enjoy it very much!

When it comes to white wine, I have to admit my love goes to Loire chenin blanc and Burgundy chardonnay wines! 😉 And as a crazy oyster fan, my choice usually goes to Chablis or Champagne 🥂 (but we’ll let the bubbles apart tonight!), but I too often forget Muscadet is an ultimate pairing 👍

Not any Muscadet of course, but over the past decade a lot has been going on in the area and the appellation does produce more and more vibrant and interesting wines made of melon de Bourgogne grape ☺️

Domaine Bonnet Huteau is a 4-generation family producer, located just a 20-minute drive from the city of Nantes 🇫🇷 But this organic melon de Bourgogne is not produced under the AOC Muscadet but as a Vin de France du Pays Nantais (no appellation), because the wine is vinified in amphoras. The idea of that cuvée "Medolia" was to keep the purest expression of both the grape and the terroir ☺️

Aged on lees for 9 months in special terracotta amphoras made in Tuscany. Elegant nose of white 🌼flowers, 🍋citrus and dry fruits. Round and crisp, with a lot of freshness and structure. Very interesting cuvée, full of contrast. A bit pricey though.

Fleur de Pédesclaux is the second wine of Chateau Pedesclaux, but it is not a second wine in any aspect! This 2016 vintage is particularly fresh, elegant, and dangerously already drinkable for such a young serious Bordeaux wine! That shows how they master the maturing of the wine 👍

The wine is a blend of mostly 🍇merlot (67%), with 🍇cabernet sauvignon (30%) and a bit of 🍇petit verdot (3%). A lot of red fruits, a crisp acidity and some silky tannins make this wine a real pleasure for your palate 🤤 A real stunner my friends! Do not miss it if you see it on the shelves!

It is a blend of 44 % 🍇merlot, 38 % 🍇cabernet franc and 18 % 🍇cabernet sauvignon coming from 40 year-old vines on clay, sand-clay and limestone soils. Vinification without crushing and partly in whole bunches. Initial fermentation in conical stainless steel vats and malolactic fermentation partly in barrels. Aged for 18 months in oak barrels (80% new). 30,000 bottles only 😌

Château Smith Haut Lafitte Grand Cru Classé 2011 is a very beautiful wine. Made of mostly 🍇cabernet sauvignon (55%) and 🍇merlot (38%, with a bit of 🍇cabernet franc (8%) and 🍇petit verdot (1%). Fermentation of whole uncrushed grape berries in small oak vats and extraction with manual pigeage. Then aging in on the lees in barrels  for 18 months (60% new).

Elegant nose of blueberry, liquorice and exotic spices. The tannins have started to soften, but just a bit and show a great aging potential 😊 A lot of tension and acidity, this wine is already very enjoyable, but with such concentration and ripe fruit, it is made to last 👏 I wish I had a few bottles of that one in my cellar.... 😌 Cheers everyone!

Purchasing old vintages is usually very expensive 💵💵💵 and most of the time you don't know how the wine was kept during all that time... 🤨

Now I store a lot of wine in my cellar 😬 but I’ll still need to wait quite a bit to enjoy old cuvées. My last concern is that life is short, so keeping wine is great but drinking it is better! 🙃

Great malbec has amazing capacity to age. And this 83 do not disappoint. I was four-year old when that wine was produced! 😁 Don’t expect anymore fruit of course, but the wine is still alive and shows very well with its subtle third aromas of mushroom and fennel 🤤

Domaine Enclos des Anges is located near Calvi, in the Northwestern part of the island. The 20 ha vineyard is planted in red with niellucciu, syrah, grenache and sciacarellu, in white with vermentino, mostly on granite soils.

The cuvée Semper Fidelis is a blend of 🍇niellucciu (70%) and 🍇sciacarellu (30%). The winemaker, Richard Spurr, ages the wine on fine lees for a period of 18 months on concrete vats, a wine-making process, which is quite unique on the island 😜
